We are Virginia and Niccolò, and in the countryside surrounding the Renaissance village of Cerreto Guidi, along the ancient Via Francigena, we take care of the vineyards that our grandfather left us. Our goal is to treasure the history of the place, promoting the territory with an eye to the future while respecting tradition. Together, we try to give character to our “artisan” products in the best and most noble sense of the term, creating authentic wines with soul, clearly and unmistakably Tuscan in origin, which interpret and express our land with originality. Our wine is the child of our territory and is a sincere expression of the unique characteristics of each vintage. Our work is respectful and delicate: we take care of the vineyards with humility and patience, but also with a great desire to have fun. Our incessant desire to experiment and improve allows us to create authentic wines that want to be part of a memory. Our mission is to pursue quality in the vineyard and then in the cellar, paying the utmost attention to our grapes. We have rediscovered the traditional Tuscan method in our Chianti by processing the grapes in purity with different refinements. The harvest is manual every year. We have wine vats made of different materials in which we vinify and carry out the aging process: in addition to steel, our everyday tools are our large Tuscan oak barrels and terracotta amphorae. This is how we create local wines with a prevalence of Sangiovese, characterized by their drinkability and aromatic spectrum. Winery Tours Colle Adimari opens its doors to you for an authentic experience of everyday life in the winery. We will show you everything that goes into making our wines, sharing our greatest passion with you. You will meet the people, learn about the history of the place, and discover a little about the transformation of the grapes. Whether it is summer, fall, or spring, a walk through the vineyard is always a delightful experience. The tour continues in the cellar and ends in the tasting room, where we will open the bottles for a guided tasting of our wines accompanied by fresh local delicacies. The Wine Tour lasts about an hour and a half on average and can be completely customized according to the number of people and individual needs. Our winery is open six days a week with the following hours: From Monday to Friday from 9:00 AM to 1:00 PM and from 2:00 PM to 6:00 PM; on Saturday from 9:00 AM to 1:00 PM. We are closed on Sunday. The wine shop with direct sales follows the same opening hours as the winery. For information and reservations, write to us at info@colleadimari.it
