At 56 and with the enthusiasm of a teenager, Paolo Sacchetti has already built a good portion of that “nuovo mondo” (new world) he was aspiring to. From his workshop, aptly named “Il Nuovo Mondo”, a small pastry boutique in the historic centre of Prato, he satisfies the most demanding gourmands in light also of the fact that as vice-president of the Accademia dei Pasticceri Italiani, The academy of Italian confectioners (AMPI), he feels a strong responsibility to care and constantly perfect the pastry making tradition of Italy. On the other hand, faithful to his origins and a hopeless sweet-tooth himself, not a day goes by when he would not devote himself to studying the traditional recipes of his territory. His sweet pride and joy is in fact the “Pesca di Prato” (Prato’s Peach), of which Sacchetti has become an emblem at a national level; it is a specialty from Prato, whose tradition was being lost, and that he decided to recover and give value to. Opening hours: 7.30AM – 1.00PM and 3.30 – 8.00PM. Closed on Monday.
