Caseificio Matteassi Onelio

The cheese factory Caseificio Matteassi Onelio S.r.l. started in September 1965 and for three generations has been producing cheeses that keep a strong link with the territory and the traditions of the Valdichiana and of Tuscany in general. The milk used is exclusively of Italian origin, mainly from the area of the Crete Senesi, of the Valdichiana Aretina, Senese and Umbra. The cheese factory uses annually about 5 million liters of milk, mainly sheep milk as well as goat and cow milk. The quality of the products comes from the harmonic encounter of tradition and modernity; we use the newest machineries, however always respecting the craftsmanship of the manufacturing. We have a wide, varied product range that goes from the very soft cheeses, like the fresh ricotta without preservatices and entirely made by hand, to the soft pecorinos (sheep cheeses), through the creamy cheeses, the mid-aged ones, to the classical aged cheeses, aged in the Tufa Grotto, the Pecorino Toscano DOP, the sharp cheeses in barrique and the Reserve aged 12 to 18 months.
